Overnight Oats Breakfast Parfait 🍓
Wake up to a vibrant and nutritious make-ahead breakfast!
- 3 tbsp rolled oats
- 2 tbsp chia seeds
- 125 ml plant based milk (1/2 cup)
- 1 tbsp pomegranate seeds
- 375 g coconut yogurt (or other dairy free yogurt) (1 1/2 cups)
- 1 tbsp beetroot powder
- 1 tbsp maple syrup
- 5 tbsp fresh fruit
Combine the oats, chia seeds, milk and pomegranate seeds in a glass or canning jar, You might need to adjust the amount of ingredients slightly depending on the size of your glass. Leave to set in the fridge, while you prepare your yogurt.
In a small bowl, mix the yogurt with the beetroot powder and maple syrup.
Layer the yogurt on top of the overnight oats and top with your favourite fruit. Chill overnight and enjoy in the morning!
