You'd never guess that this creamy celery soup is totally dairy free. Not only is it vegan, but it's also low calorie and gluten free.

  • 2 tablespoons olive oil
  • 1 onion onion finely diced
  • 5 cups celery chopped
  • 3 cups potatoes chopped
  • 3 cloves garlic finely minced
  • 1 tablespoon thyme
  • ¼ teaspoon salt
  • 4 cups vegetable broth


  • Heat the olive oil in a large pot and saute the onion, garlic, celery, potatoes and thyme for 10 minutes.
  • Add the vegetable broth and simmer for 15 minutes.
  • Using a stick blender, puree the soup.
