Vegan Celery Soup
You'd never guess that this creamy celery soup is totally dairy free. Not only is it vegan, but it's also low calorie and gluten free.
- 2 tablespoons olive oil
- 1 onion onion finely diced
- 5 cups celery chopped
- 3 cups potatoes chopped
- 3 cloves garlic finely minced
- 1 tablespoon thyme
- ¼ teaspoon salt
- 4 cups vegetable broth
Heat the olive oil in a large pot and saute the onion, garlic, celery, potatoes and thyme for 10 minutes.
Add the vegetable broth and simmer for 15 minutes.
Using a stick blender, puree the soup.
